Looking at the first picture the gamepad target values seem off? Are you using the right gamepad profile? You could try with the mobile client to see if you get the same behaviour.

No visible difference using the mobile app.
If there's a different gamepad profile I should use, let me know please. I took the default it chose for my xbox360 controller.

Most likely it is either a bad sensor or an assembly problem.
1. To test the sensor please check with the virtual horizon in the cfclient that it seems to be have correctly. Check also that the actual pitch and roll values in the flight tab are close to zero when the CF2 is put on a level surface.
2. Double check the assembly. Are the propellers (CW or CCW) on the right motor and facing the right way. During the short spin during the startup do they all seem to spin about the same (to rule out bad motor or hair stuck)?
Hope these tests can point us in the right direction.
